I LOVE these blueberries muffins!
They're healthy, delicious, protein-packed, dairy-free, and gluten-free!
- 2 Cups Almond Flour
- 2 Eggs & 2 Egg Whites
- 1/4 Cup Maple Syrup or Stevia
- 1/2 Tsp Baking Soda
- 1 Tbsp Apple Cider Vinegar
- Pinch of Salt
- ½ teaspoon cinnamon
- 1 Tsp Vanilla Extract
- 2 Tbsp Coconut Oil (or Other Healthy Oil)
- 1 Cup Blueberries
Pre-heat oven to 350 F. Prepare muffin tin with muffin liners. Add all ingredients except the blueberries into a large bowl. Mix together until ingredients are well combined. Fold in blueberries. Evenly scoop batter into muffin tin. Bake for 25 minutes. Remove from oven, place on cooling rack and enjoy!
